Summer is knocking on the door: a riot of colors and flavors.
The first warm days have transformed the landscape. The more intense sun and mild temperatures are accelerating the growth and maturation of our products, bringing a breath of energy and excitement throughout the company. It is a period of great activity, but also of immense gratification, because the earth is already offering us its first gifts.
The first fruits of the earth: fennel and sweet cherries.
Among the protagonists of this initial phase of summer is wild fennel, which we carefully harvest in the early hours of the morning to preserve its freshness and unmistakable aroma. Its aromatic and digestive properties make it a versatile ingredient in the kitchen, ideal for flavoring white meat dishes, fish, salads or for preparing delicious herbal teas.
But summer is also synonymous with juicy and colorful fruit. In our orchard, the cherries are reaching full maturity, with their red and shiny bunches that invite you to harvest. And not only that! The first apricots are also starting to show their warm tones, promising sweet and fragrant early fruits. The harvest of these early fruits is a moment of great joy, a preview of the richness that summer will bring with it.
In our fields, the two ancient grains are also ripening, Verna soft wheat and Senatore Cappelli durum wheat, with which we will make our flours. With the wind of this mild season, the movement of the ears creates a play of sounds and suggestions. Finally, the lavender is blooming, attracting bees and butterflies in all their splendor. Some show themselves with their dress that looks like black velvet with small spots of an intense and brilliant purple.
Busy bees and sweet honey: ready for the first honey extraction.
Our tireless bees are working at full speed, taking advantage of the lush flowering to collect precious nectar. With the rising temperatures and the abundance of flowers, they are preparing for the first honey extraction of the season. It is an event we await with trepidation: the honey we will collect will be the fruit of their work and the purity of our organic fields, a sweet and aromatic nectar that contains the essence of our land.
Intensifying work: irrigation and crop care.
As the heat increases, constant irrigation becomes a fundamental activity to ensure the health and optimal growth of our plants. We dedicate time and energy to carefully monitoring the water needs of each crop, using systems that minimize waste and maximize effectiveness, in full compliance with the principles of organic farming.

This phase of “early abundance” is also a crucial time of preparation for the main harvests that await us in the months to come. We are caring for each individual plant with dedication, laying the foundations for a rich and high-quality production.
